Breakfast Sausage

Breakfast sausage is usually fresh but sometimes smoked. It can be sold in small links, patties, chubs, tray packs or in bulk.

Typical Products include:
Breakfast links and country style sausage patties, in savory sage and spicy hot flavors and Mexican chorizo.

Casing types commonly used:
Links: in natural coarse emulsion grade sheep casings or collagen casings for fresh applications, traditional sizes: 18-23mm diameter

Chubs: in plastic casings of 1#, 3# or 5# capacity.

Patties: may be formed in plastic casings of 2.5" diameter, chilled and sliced into patties.

Mexican style chorizo: Plastic casings for 1lb, 12oz , and 10oz packaging..
